Refreshing Strawberry Salad with Balsamic Glaze
Ingredients:
- 4 cups fresh strawberries, hulled and sliced
- 4 cups mixed salad greens (such as baby spinach, arugula, and romaine)
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds, toasted
- 1/4 cup thinly sliced red onion
- 1/4 cup fresh basil leaves, torn
- Balsamic glaze, for drizzling
- Salt and freshly ground black pepper, to taste
For the Balsamic Glaze:
- 1/2 cup balsamic vinegar
- 2 tablespoons honey or maple syrup (optional)
Instructions:
- Prepare the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey or maple syrup (if using) over medium heat. Bring to a simmer and cook, stirring occasionally, until the vinegar has thickened and reduced by half, about 10-15 minutes. Remove from heat and set aside to cool.
- Toast the Almonds: In a dry skillet over medium heat, toast the sliced almonds until golden and fragrant, about 3-5 minutes. Keep an eye on them to prevent burning. Remove from heat and let cool.
- Assemble the Salad: In a large salad bowl, combine the mixed greens, sliced strawberries, crumbled feta cheese, sliced red onion, torn basil leaves, and toasted almonds. Toss gently to combine.
- Drizzle with Balsamic Glaze: Just before serving, drizzle the salad with the prepared balsamic glaze. Start with a little and add more according to your taste preferences. Season with salt and freshly ground black pepper, to taste.
- Serve: Transfer the strawberry salad to individual plates or a serving platter. Garnish with additional fresh basil leaves or feta cheese, if desired. Serve immediately and enjoy!
